Pumpkin Soup Recipe

Pumpkin Soup with ginger and curry
4 servings

Ingredients
800 g. fresh pumpkin
3 medium potatoes, roughly chopped
0.5 to 0.75 liter of vegetable stock
2 cloves of garlic
3 teaspoons of fresh grated ginger
2 teaspoons curry powder
2 tablespoons of Olive oil
sour cream
Fresh coriander
salt and pepper, to taste

Instructions
Peel pumpkin and remove seeds, cut into small pieces, put into large saucepan.
Ad roughly chopped garlic and olive oil and cook over medium fire until pumpkin is starting to darken slightly. Add 0.5 liter of vegetable stock and the potatoes and simmer over low fire until pumpkin and potato have become soft.
Add the ginger and curry powder and a tablespoon of freshly chopped coriander.
Process with a food blender and if needed add some more stock till the consistency of the soup is what you want.
(I like my soup thick so I don’t add too much)
Return to heat and simmer untill the soup is hot again.

Add salt and pepper to taste and as a finishing touch when serving put a spoonfull of sour cream in and some more fresh coriander on top.

Great with chunky pieces of crumbly bread.
